Years ago when I was working at The Chew our days would start super early. I was still living in NJ and the commute was pretty long. I woke up at 4:20 am and got to work around 5:30 am. So come mid morning, it almost felt like dinner time.
We were always looking for something to snack on that wasn’t a ribeye steak or a burger. Don’t get me wrong, we definitely tried almost all of the food that went out but when we wanted to have something that boosted our energy for next day prep, these were it! We made many different versions but to me, this was our go to one.
We used to skip the dip in chocolate and roll them in desiccated coconut. We made them about the size of a golf ball but you tell me. I think I might prefer them to size of a marble so they’re more bite size?

Confetti Brownie Batter Bites
Makes 12 (1 oz scoops)
8 ounces pitted medjool dates
2 tablespoons unsweetened almond butter
2 tablespoons maple syrup
1 teaspoon vanilla bean paste
¼ cup unsweetened cacao powder
2 tablespoons almond flour
½ teaspoon kosher salt
Chocolate Coating
4 ounces dark chocolate
1 teaspoon coconut oil
All natural sprinkles, for garnish
Prepare a sheet tray with parchment paper.
To the bowl of a food processor, add the dates and almond butter. Process until the dates begin to break down. With the machine running, add in the maple syrup and vanilla bean paste. Process until smooth. Add the cacao powder, almond flour and salt. Process until smooth and the batter begins to release from the sides of the bowl.
Using a 1 ounce scoop, scoop the batter onto the prepared sheet tray. Roll into smooth balls.
In 30 second increments, melt the chocolate with the coconut oil in a microwave safe bowl. Once melted, stir until smooth and let cool slightly.
Using two forks, dip each batter ball into the melted chocolate and land the dipped onto the prepared sheet pan. Garnish each with a sprinkle of sprinkles. Let the chocolate set for 10 minutes until the chocolate is solid. Eat immediately or store in the freezer for a late night snack whenever you feel like something sweet!
