Corn Butter BLT
The last of summer
Summer has come to a close, which I am so sad about but also very excited for some fall ingredients. We close this Chapter with a little taste of summer but with the warmth we need for fall. This sandwich checks all the boxes. Everyone knows I am obsessed with a BLT so I took some of my favorite things and put them together. Focaccia, corn and bacon.
Corn Butter
🔪 1 ear corn, shucked & 1/2’d
🔪1 stick unsalted butter, room temperature
🔪kosher salt, to taste
Step 1️⃣ Bring a medium pot of water to a boil. Drop in the corn and cook for 5 minutes. Remove the corn with tongs and place into an ice bath to cool for a few minutes. Remove from the ice bath and dry thoroughly.
Step 2️⃣ Remove the kernels from the cob. Add to the bowl of a food processor and process until almost smooth. Drop in the room temperature butter and process until combined. Season with salt, process again, taste and adjust. Add the butter to a piece of parchment and shape into a log using a bench scraper.
Step 3️⃣Roll up with the parchment and seal the corners. Place in the refrigerator until ready to use.
Step 4️⃣Note: This butter may appear a bit broke because of the water content in the corn. It’s ok the taste is there and once it starts to melt on bread, there are these wonderful pieces of corn that you are left with. Trust me on this.
Corn Butter BLT
🔪 1x recipe corn butter
🔪 1/2 x recipe focaccia, sliced in 1/2 horizontally (I love salt, fat acid heat, Ligurian Focaccia)
🔪 1/2 # cooked Canadian or thick cut bacon (lay onto a sheet tray and cook at 400F for 20-25 min until crispy)
🔪1 heirloom tomato, sliced thin
🔪 shredded iceberg lettuce
🔪1 lemon, juiced
🔪salt, to taste
Step 1️⃣Preheat oven to broil. Toast a square of focaccia until lightly crispy and golden. Remove and spread about 2 TB of corn butter onto each half.
Step 2️⃣ Next, to the bottom 1/2 of the bread, add the crispy bacon, then the shredded lettuce, squeeze of lemon juice, tomatoes, sprinkle with slat and top with the other half of focaccia. Slice in half and eat!
It doesn’t take a lot of ingredients to make a good sandwich but it does take quality ingredients. I think that is a good way to think about food. Minimal ingredients but quality matters.
