The Chili That Will Win Your Super Bowl Party
The Super Bowl is almost here, and while the game itself is the main event, we all know the food spread is a close second. This year, ditch the tired, heavy red chili and bring a vibrant, flavor-packed Green Chicken Chili to the table.
It’s light enough to enjoy without feeling sluggish by the halftime show, but hearty enough to satisfy even the most fervent fan. Plus, with a secret “finishing” step, it gets an incredible burst of fresh color and taste that will have everyone asking for the recipe.
The Secret Weapon: A Burst of Freshness!
Most chili recipes have you cook the herbs down until they’re brown and muted. Not this one. We’re pureeing fresh cilantro with lime juice and stirring that neon-green mixture in at the very last second. This keeps the flavors bright, the acid sharp, and the color absolutely stunning.

Green Chicken Chili
Yields: 6-8 servings
Prep time: 15 minutes
Cook time: 30 minutes
The Ingredients
2 TB olive oil
1 yellow onion, finely chopped
1 bell pepper, finely chopped
2 garlic cloves, chopped
1 1/2 tsps ground cumin
1 1/2 tsps dried oregano
2 cans cannellini beans (drained and rinsed)
3 cups chicken stock
2-3 cups shredded chicken (rotisserie chicken is a great shortcut!)
1 cup cilantro
1/4 cup lime juice
Kosher salt and pepper, to taste

Sour cream
Shredded cheddar
Pickled onions
Diced avocado
Crushed tortilla chips
The Method
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper, sautéing until softened and translucent (about 5-7 minutes).
Stir in the garlic, cumin, and oregano. Cook for 1 minute until the kitchen smells incredible.
Pour in the chicken stock and the cannellini beans. Bring to a boil, then reduce heat and simmer for 15 minutes. This allows the beans to soften slightly and the flavors to meld. Use an immersion blender to blend about 1/2 of the mixture. This will help thicken the chili up & hide some of those beans for the kiddos!
Stir in your shredded chicken and season with salt and pepper. Let it simmer for another 5-10 minutes so the chicken absorbs the savory broth.
While the chili simmers, place your 1 cup of cilantro and 1/4 cup of lime juice in a blender or food processor. Pulse until it’s a smooth, vibrant green liquid.
Turn off the heat. Pour the cilantro-lime mixture into the pot and stir gently. Watch as the chili transforms into a bright, zesty masterpiece.
Ladle into bowls and let guests go wild at the topping bar!
