When my fam comes to visit, there are always leftover pretzels and I don’t love a pretzel so I figured let me use them in another way!
How to: Adult Chicken Fingers
🔪2 cups pretzels
🔪1 cup panko
🔪2 large eggs
🔪1 TB dijon mustard
🔪flour, for dredging
🔪1 lb chicken breast, sliced into strips
🔪olive oil, for drizzling
🔪kosher salt and freshly ground black pepper
Honey Mustard
🔪1/4 cup honey
🔪1/4 cup mustard (I used dijon)
🔪 2 tsps apple cider vinegar
🔪kosher salt, to taste
Step 1️⃣ Preheat the oven to 400F. Grease a sheet tray with olive oil.
Step 2️⃣Pulse the pretzels and panko in a food processor. Season with salt and pepper. Remove to a bowl.
Step 3️⃣ In a bowl, whisk together the eggs and dijon, season with salt.
Step 4️⃣ Add flour to a bowl and season.
Step 5️⃣ Season chicken with salt and pepper. Dredge in flour, egg, then pretzel/panko. Continue until all chicken is coated. Place directly onto the prepared sheet tray. Drizzle with olive oil and bake for 20 minutes, flipping halfway through.
Step 6️⃣ For the honey mustard: whisk together all ingredients in a bowl. Season with salt and serve with pretzel chicken fingers!
I put the leftovers on a salad the next day and they were so so good!!
