Superbowl may be over but I don’t really care about football. I do care about the food. Beignets only seemed right since the game was played in New Orleans. Beignet translates to “fritter” and is really just a delicious donut.

The can be intimidating but this recipe is totally approachable!
Beignets (makes about 12-15) @ClaireSaffitz recipe 1/2’d
🔪100 grams Luke warm water
🔪1/2 tsp active dry yeast
🔪 1 3/4 C ap flour + more for rolling
🔪1/4 c whole wheat
🔪1/4 cup sugar
🔪1 tsp salt
🔪1/2 tsp baking powder
🔪1/4 c whole milk
🔪1 large Egg
🔪powered sugar, for dusting
🔪4-5” neutral oil, for frying
Step 1️⃣Whisk together the warm water with the yeast and let bloom for 5 minutes. It should be foamy, if it’s not do it again, with cooler water.
Step 2️⃣Meanwhile, whisk together all your dry ingredients into a large bowl.
Step 3️⃣In a 2 cup measuring cup, whisk together the whole milk and egg, whisk in the bloomed yeast and water mixture. Pour the wet ingredients into the dry and mix until a dough forms. It will be wet and sticky, continue to knead the dough for about 10 minutes until it wants to stick to the bowl more than your hands.
Step 4️⃣Place the dough nicely into the bowl and cover with plastic wrap. Let rise until doubled in size, about 2 hours depending on the temp of your space. Once it has doubled in size, put the dough in the refrigerator overnight.
Step 5️⃣ The next day, heat the oil to 375F in a large Dutch oven. On a generously floured service, roll the dough out to 1/4” thick, about 13x9” rectangle. Cut into desired shapes. Gently dust off excess flour and fry about 45 sec/1 min a side. Remove to a sheet tray lined with a rack and continue to fry until all are golden and cooked.
Step 6️⃣ Put about 1 cup of powdered sugar into a brown paper bag. Add the beignets ( about 5 at a time), close the bag and shake until coated. Eat immediately.
