Wings are a must for Sunday and J Timothy makes the best I have ever had. They are called Dirt wings because of how they are cooked! Twice fried: 1x dry and 2nd time sauced.
Cameraman took me here years ago when we first started dating and TBH I have never been a huge wing fan but these, these are something special. I canβt think about the oil these get fried in at the restaurant or else I wouldnβt have eaten them there but making them at home, I feel a bit better using olive oil but that 2nd fry with the sauce turns the oil black. Eh, its a once a year splurge!
I am a ranch girl all the way but do you. I paired these with a healthy ranch that pairs perfectly with the spicy, buttery sauce. Hope you all enjoy!
Copycat J Timothy Wings
πͺ 2 #s wings
πͺ1 1/2 C hot sauce (I used Franks and Crystal)
πͺ1 stick unsalted butter, melted
πͺ2 TB sugar
πͺ2 TB white vinegar
πͺ1/2C ketchup
πͺ2 1/2 tsp garlic powder
πͺolive oil, or neutral oil, for frying
Healthy-ish Ranch
πͺ1/2 C full fat greek yogurt
πͺjuice of 1/2 lemon
πͺ1/4 tsp onion powder
πͺ1/4 tsp garlic powder
πͺ1/4 cup dill, chopped
πͺ1/4 cup chives, chopped
πͺ1-2 TB water, to thin out
πͺsalt, to taste
πͺcelery sticks, for serving
Step 1οΈβ£Lay the wings out onto a sheet tray and leave uncovered in the fridge, overnight. This helps dry the skin out for a nice crispy fry.
Step 2οΈβ£Put about 4-5β of oil into a large Dutch oven over medium heat. Bring to 360F. Drop the wings in and fry for 5 minutes. Place into a large bowl.
Step 3οΈβ£Whisk together the hot sauce, melted butter, sugar, vinegar, ketchup, and garlic powder. Ladle some sauce over the wings and toss to coat.
Step 4οΈβ£Bring that oil back up to temp before frying the sauced wings. Carefully drop them into the oil, in batches as to not overcrowd. Cook until dark and charred, about 5-6 more minutes. Using a spider, place into the same saucy bowl. Add more sauce and toss until coated.
Step 5οΈβ£For the Ranch: Whisk together all the ingredients and use for dipping! Serve the wings with the sauce and celery.
