Feel Good Nachos! Finally a nacho I donβt feel gross after eating. Most of this can be prepped the day before so you are just building the day of. Oh and use store bought pita chips if you donβt feel like cooking them yourself!

Pita Chip Nachos
Lemon Steak
πͺ 1 (3#) flank steak
πͺ2 garlic cloves, grated
πͺ1 tsp dried oregano
πͺ1 lemon, juiced
πͺolive oil
πͺkosher salt, to taste
Pita Chips
πͺ4 store-bought pitas, sliced into 8 wedges each & separated
πͺ1/4 C olive oil
πͺkosher salt, to taste
Hummus
πͺ2 cans chickpeas, drained, rinsed
πͺ1 small garlic clove
πͺ1/2C tahini
πͺ2 lemons, juiced
πͺkosher salt, to taste
πͺwarm water, to thin out
Marinated Tomatoes
πͺ1 cup cherry tomatoes, halved
πͺjuice of 1 lemon
πͺhandful torn cilantro
πͺkosher salt, to taste
Feta Tzatziki
πͺ3/4C greek yogurt
πͺjuice of 1 lemon
πͺ2 Persian cucumbers, peeled, grated & excess water squeezed out
πͺ1/2 cup fresh dill, chopped
πͺ4 ounces feta, crumbled
Pickled onions
πͺ1C white vinegar
πͺ1/4 C water
πͺ1 TB salt
πͺ2 TB sugar
πͺ1 red onion, thinly shaved
Steak
Step 1οΈβ£Season the steak generously with salt, to each side add the garlic, oregano, lemon juice and a drizzle of olive oil. Make sure it is coated. Cover and let sit in the refrigerator until ready to grill. Preheat an outdoor grill to high. Add the steak and grill 6-8 min per side. Remove and let rest. Slice against the grain when ready to top the nachos.
Chips
Step 2οΈβ£Preheat the oven to 375F. Toss the pita chips with olive oil and season with salt. Toast in the oven until golden and crispy about 10-12 minutes. Remove from the oven and set aside until ready to build.
Hummus
Step 3οΈβ£To a food processor, add all the ingredients and process until smooth. Check seasoning and adjust consistency with water as needed.
Tzatziki
Step 4οΈβ£Add all ingredients to a bowl and mix. Check seasoning.
Pickled Onions
Step 5οΈβ£Add all ingredients except onions to a sauce pot, bring to a boil and once the sugar and salt are dissolved, remove from the heat and pour directly over the onions.
