Tagliatelle with Butter & Parm
🔪1/2 lb fresh tagliatelle
🔪4 ounces unsalted butter
🔪 freshly grated parmigiano
🔪kosher salt, to taste
Step 1️⃣Bring a large pasta pot to a boil. Once boiling, season heavily with salt.
Step 2️⃣Heat a medium saute over medium heat. Add the butter and let melt.
Step 3️⃣Drop the fresh pasta and cook for 2-3 minutes.
Step 4️⃣Using tongs, remove the pasta from the water and add directly into the melted butter. Letting any excess water go directly into the butter. Once all the pasta is in, use tongs to stir constantly to release those starches, adding pasta water as needed, stirring to emulsify the sauce. Remove from the heat and grate fresh parm over the top. (About 1/4-1/2 cup) Toss to incorporate into the sauce. Add a ladleful of pasta water to melt it in.
Step 5️⃣Twirl and plate. Garnish with more parm. Best if you warm the bowls for serving as this dish is best served hot/warm!!
